Les Artisans des Saveurs was born in 2015, following a meeting between Daniel Larrivée of Groupe Tomapure and Michel Lachaume, a gardener with a passion for farming and hybridizing. Ever since, Michel has been on the lookout for the tastiest fruits and vegetables, to meet a growing demand from his various customers, mainly chefs.
Mr. Lachaume has a degree in biology, but his passion for discovering new varieties of fruits and vegetables led him down the path of hybridization. Thanks to his expertise, acquired through hands-on experience, he is among the rare members of the Ordre des agronomes du Québec who has not done the required training.
The exploration of varieties began in his garden, and quickly grew to take in nearly three acres of land. With more than 25 years of experience in the field (no pun intended), discovering new flavours is still what pushes Lachaume to surpass himself as a “free hybridizer.” Today, Les Artisans des Saveurs produces and distributes across Canada.
As with the majority of farmers, Lachaume’s greatest challenges are the weather and the various diseases that the plants may face. The summer of 2017, for example, was rather cool and wet, requiring his team to redouble their efforts to maintain the health and quality of the crops. To remedy these problems, our master gardener and his team grow the most naturally resistant varieties. “What I’m interested in is resistance to disease,” he said in an interview with the Bulletin des agriculteurs.
Obviously, Lachaume’s most pleasant surprises occur when he discovers new varieties and flavours. His most recent finds are the Hungarian red pepper, the ajvarski pepper (also red), and the oda pepper (purple), all very tasty. He also includes a Portuguese cabbage, “penca of chaves,” which resembles kale, but flatter with much more tasty stalks. A big fan of herbs and spices, our maverick hybridizer also works with pápalo, pipicha and African lemon savory. In addition, Michel is the father of a potato variety that chefs are especially fond of, the Prince Louis Albert, named after Prince Louis Albert de Broglie, nicknamed the “Gardener Prince.” “In terms of flavour,” he explains, “multiply the taste of the Yukon Gold by ten, and you have the Prince Louis Albert.”
Michel draws inspiration from working with chefs, and the pleasure of finding them premium products to fulfill their ambitions, which never stop growing. 😉
Michel aspires to continue working with Quebec’s best chefs and develop more products with them. He dreams of transforming the way consumers feed themselves by supplying the market with local and organic flavours of all kinds.
Michel had the opportunity to assist one of his idols, Tom Wagner, as a translator-popularizer during a tour of Switzerland, Belgium and France. Wagner is the father of many varieties of tomatoes (Green Zebra, Banana Legs and Vintage Wine), and potatoes (Viva El Sol, Adirondacksen and Nordic October, among others).
An epicurean who loves good food, Michel admits to having a major weakness for beef cheeks and pasta with Bolognese sauce.
“ENFANT TERIBLE” SINCE
Michel has worked with Les Enfants Terribles since the spring of 2017, and for him, this is only the beginning of a long relationship. He loves the energy and curiosity of our chefs, as well as their willingness to surpass themselves to offer more and better dishes using the best quality products.
